Gutsy Strawberry Shortcake Bars

Seasonal eating is incredible for gut health. That’s because food that’s in season is fresh and more nutritious, better for the environment – Plus, eating seasonally ensures that you are getting a diverse diet rich in an abundance of different nutrients (which make the good microbes in your gut super happy).

Right now is one of my favorite food seasons of the year – Strawberry season! There is nothing like a strawberry picked at its peak. They are ruby red, juicy and extremely flavorful… And one of the first desserts I think of when I think of a strawberry is a strawberry shortcake. My favorite ever summer treat as a kid were those strawberry shortbread ice cream bars.

For this recipe I was inspired to make a strawberry shortcake ice-cream-esque cake bar (say that 5 times fast) incorporating the luscious seasonal strawberries and the gut health power of Just Thrive spore-based Probiotic. Gutsy Strawberry Shortcake Bars

Ingredients:

Cake Bar:

Coco Cream:

Additional:

  • 1 basket fresh seasonal strawberries

Directions:

  1. Preheat your oven to 375
  2. Combine almond flour, baking powder and salt and whisk together
  3. Whisk together the rest of the ingredients then add to dry
  4. Comb together with a fork until thoroughly combined and cupcake batter like consistency
  5. Fill up 6 mini loaf tins
  6. Bake for 15-18 minutes (until cooked through and golden brown)
  7. Let cool
  8. To make the coco whip: strain out the liquid part of the coconut cream and set aside. Whip together the solid part of the coconut cream with maple syrup, vanilla, and opened Just Thrive Probiotic capsules
  9. Top cooled cake bars with coconut whip and chopped strawberries
  10. Place in freezer until solidified to make more of an ice cream bar OR serve soft as is!
